I finally got round to having a proper play with NSVCap and managed to stream a video + audio stream on Level-1 that plays on VLC (mac + pc) or Winamp (pc). Previously we had only played with the video side of things.

It worked really well for me. Both audio (128kbps) and video (100 kbps) are of a decent quality. Im pretty sure with a bit of tweaking and a fast enough broadband connection the video quality could be even better.
