June 2, 2006 at 3:09 pm #1076968Ingredients: Eggs, chocolate, pinch of salt.
You need one egg for every two ounces of chocolate (per person, usually). Separate the egg white from the yolk.
Melt the chocolate indirectly (I’m sure you know) by placing in a cup and putting the cup in a pan of boiling water. Do not overheat the chocolate.
break down the yolk, generally whisking or stirring with a fork or something.
When chocolate is melted, add the beaten yolk and stir in until consistency is uniform, ie, no isolated patches of chocolate or egg yolk.
Whisk the egg white, with a tiny, TINY, pinch of salt (I’ve overdone it once or twice; still ate it, though).
Fold the egg white into the chocolatey yolk.
Place in suitably sized dishes (the smaller the sooner it sets), and put in the fridge until it sets.
It’s a lot simpler than I have made it sound.
As with any uncooked egg product, do not give to infants or geriatrics, because of the salmonella risk (unless thay are brats or twats). -
