Alright,
I’m cooking ostrich for me and a couple of mates but I have a veggie coming over too, I’m off to the shops, can anyone suggest anything to make him other than the traditional and boring veggie lasagne? I’m making succotash to go with the ostrich, so something that goes with that maybe?

->> this lot goes in the pot and is boiled
Mung Dahl (type of lentil)
Beans (black eye, butter, black-eyed)
Spinich-> then in the frying pan:
Garlick
Ginger
Onions
Peppers
Caugettes
Butternut squash if you’re feeling like splashing outAs for sauce, experiment but I put in chopped tomatoes, cumin, garamasala, hing, bay leaf, curry leaves, cumin seeds (fried id butter), MSG, salt, sugar, and tons of dried coconut powder to get that creamyness
gauranga potatoes go very nicely with it

Gauranga Potatoes Recipe – Food.com – 251998Coconut paste is really good for making curries creamy. You might have to goto a smaller indian shop rather then a super market to get it though. luckily there’s a shop not far round the corner to me that do it.

February 20, 2012 at 2:21 pm #1249489cool, careful with beans and stuff they need soaking overnight and boiling separately if they’re dried. Best get tinned beans that are already cooked.
it takes some experimentation to get it right, my first curry wasn’t that nice.. you learn to just put triple the spices in that any recipie does.. and if all else fails.. just add salt and sugar!! 🙂

Get the quorn enchiladas from sainsburys or whatever, stick them in the oven
Boil rice and peasSauce:
Two heaped tablespoons of chic pea flour (gram flour). Mix with a little water into a paste. Add spices to taste (I go with garamasala, vegetable stock, pinch of cumin, salt, sugar). And coconut powder as always. Mix this whole lot into a thick paste getting rid of all the lumps.
Put half a pint of milk in a pan on a low heat. Mix in the gloop. Stir frequently until it goes thinkServe the enchiladas on the rice/peas and put the sauce in a jug to pour over as desired
Less than 20 mins in the kitchen and well tasty.

or chilli
i also like goats cheese so maybe a tart, but I’ve been looking on this site for lots of other options as I’ve been quite lazy with cooking recently and this has lots of tofu and veggie dishesBento Recipes: Index | Just Bento

February 20, 2012 at 11:04 pm #1249494Did a quick funds check and he ended up with veg kebab skewers with yoghurt herb and chilli dressing because it’s what was already in the house.
Succotash went down a treat as did the stuffed chicken in panacetta I ended up doing due to the butchers only having one ostrich steak, nice meal all in all, I reckon I’m going to try that curry still even just for myself, sounds reet nice. Cheers for the recommendations guys, I’m sure I’ll end up using them.
This is where I found the succotash: Cookstr – Seared Snapper over Succotash
I used Kidney Beans in Chilli Sauce instead of Lima Beans, drained a lot of the chilli sauce but still had enough to make the cream a tan colour, and it tasted nice.
I also found this, which is bloody brilliant, even if lots of the ingredients are hard to get for me in a small town far from the sea
