                Ingredients

                * 2 tbsp olive oil
                * 1 lg onion, diced
                * 5 cloves garlic, crushed
                * 1 cup fresh basil, roughly chopped
                * 1/2 cup red wine (drinking quality – the better the wine, the better the sauce)
                * 1 lg can (800g) crushed tomatoes
                * salt and pepper to season

                Directions

                1. Saute onions on lowest heat and covered, for 10 minutes. Add the garlic and basil, recover, and saute a further 5 minutes or so.
                2. Uncover and add the wine. Simmer and reduce about half the liquid. Add tomatoes, salt and pepper. Taste for seasoning.
                3. Simmer a further 15 minutes or so, uncovered, until yum and the right consistancy.

                quick and easy recipy for the sauce there for you … and cheep as hell to make .. i can get one that don’t include wine if that’s not in your budget 😉

                    pesto is nice … but it can be quite expensive … even if you make it your self it costs a good couple of quid as it can be hard getting the ingreadiance you need in small enough amounts for just a few meals .. and it doesn’t keep for very long if made fresh

                                    Vegetable Pasta Bake

                                    3 to 4 servings

                                    * 1 over-full mug of dried pasta per person
                                    * 4 large mushrooms quartered or rough chopped
                                    * 1 large onion chopped
                                    * 1 chopped pepper
                                    * 1 chopped aubergine or sliced courgette
                                    * 2 cloves of chopped /sliced garlic
                                    * Tin of 400g plum tomatoes
                                    * Pinch of Italian mixed herbs
                                    * Seasoning

                                    Optional 2 rashers of bacon diced for none vegetarians

                                    Method

                                    1. Cook pasta in boiling salted water, when cooked cool under cold running water and place in an oven proof dish(please note at this point the cooked pasta must only half fill the dish, to allow for the rest of the ingredients)
                                    2. Fry (or oven roast for 15 minutes) all the chopped vegetables and herbs in a little olive oil until soft
                                    3. Add the chopped tomato stir & cook for a few minutes to infuse the flavours (a very simple way to chop tinned tomato is to use a fork whilst the tomatoes are still in the tin)
                                    4. Check for seasoning and adjust to taste
                                    5. Pour the vegetables over the pasta and gently mix well
                                    6. If the pasta mix is a little stiff, loosen by adding a drop stock or water and place in a moderate oven for 15 to 20 mins and serve

                                    Please note: this dish can be served either stiff similar to a Lasagne or loose and saucy like a pasta Bolognaise

                                    Addition to the above if preferred

                                    * At point 2 any fresh vegetables can be used
                                    * At point 4 top with grated cheese before baking for a bubbly top
                                    * Add fried bacon in place of or in addition to the vegetables

                                                Pretty much any veg or meat goes with it, you can eat it cold, great for lunch the next day etc etc.

                                                I’m pretty shit at cooking and its only recently iv had my mates pestering me to eat better, so this is me passing the buck!

                                                    Can anyone suggest some cheap meals that dont involve beans and toatst or thost 2p sausages? All ideas greatly received, cooking isnt my strongist point!

                                                    Do you mean something to cook yourself or in a cafe or something?

                                                    You can get these cards in sainburies that tell you how to make stuff for under a fiver, you know thats means 4.99 0r summin but thats to serve four people. It will cost you less if your only cooking for 2. The cards are free and you can buy this little folder for them to go in for 49p. Its just good simple hearty food. That tastes better than baked beans, failing that of course you could try spagetti on toast.

                                                    If your on about cafe’s and such like weatherspoons do half decent meals and generaly have some buy one get on free deals on during the week, and if you like proper beer they have a good selction in there so i’m told.:love:
